Immune Soothing Veggie Soup

This comforting winter pot of goodness uses all seasonal Colorado farm veggies, and soothes the mind and body when fighting a winter-time illness. Dice up fresh leeks, carrots, parsnips, and shitake mushrooms, keeping ingredients separate. In Soup pot, heat an even covering of olive oil on medium heat, until leeks lightly sizzle when added. Brown leeks first. Next add enough water to cover leeks and cook until slightly more tender, a couple more minutes. Then whisk in a generous couple dollops of brown miso paste. Then add carrots and parsnips, and cover with water. Lastly add mushrooms. Let cook a couple more minutes. Then add salt, rosemary, herbs to taste, ginger, cayenne pepper, and cracked black pepper to taste. You may add more miso as well to fit the desired flavor. Let simmer on low until all vegetables are tender and flavors are melded. Sip and let it warm you from the inside!
