Summer Squash Noodles with Pesto

Use a potato peeler to make lots of thin strips out of your zucchini and summer squash, peeling the entire squash into strips lengthwise. Sauté the strips in olive oil, and add fresh home-made pesto, or your favorite brand of pesto, stirring so that all noodles have an even coating of sauce.
