Walnut Beet Salad with Kogane Microgreens

Snip a few generous handfuls of micro greens and put into a salad bowl. Slice half rounds of pickled beets or roasted beets and toss into the micro greens. Crumble roasted walnuts and blue cheese into the salad, and dress with your favorite balsamic vinaigrette.
