Sweet Fried Golden Beets

Ingredients:
~Organic Corn Flakes - about 3 cups un-crushed (more or less depending on how much you use)
~salt
~cayenne pepper
~Butter (to taste)
~a couple cloves of fresh garlic
~Coconut oil - LOTS! (enough to fry the beets in so that they are half-covered when put in the pan)
~a small bowl of flour to coat and dip the beet slices into
~3 eggs, whisked in a bowl for dipping

 Slice the beets into round slices about a quarter inch thick and set aside.
Finely crush or dice the garlic and crush the corn flakes as fine as possible.
Mix together and add salt and cayenne to taste.
Heat the coconut oil and butter in a medium-depth skillet until it slightly begins to bubble (NOT burn- it doesn't take much to heat coconut oil).
Coat each beet slice in the following order:
1) Pat each slice into the flour so that it is evenly and thinly coated with a light dusting of flour.
2) Next, dip each beet slice into the egg batter.
3) Finally, coat each slice generously with the corn flake batter.
Drop into the pan and hot oil, and fry in medium heat until tender inside (not soggy), and crispy and deeply browned on the outside. Cool slightly and enjoy!
