Rosemary Peach Relish

This lightly sweet side can be paired with savory or sweet dishes, and takes full advantage of Colorado Peach season! Serves 3. Simply chop 5 fresh peaches coarsely, and set aside. Grind a handful of macadamia nuts. Finely chop a handful of rosemary sprigs. Mix all of the above ingredients, along with a few dashes of salt. Lightly drizzle in some honey. Stir together and let marinate/sit refrigerated for an hour. Enjoy alone, as a garnish for pork dishes, or atop sweet breads and/or vanilla ice cream.
